Today I sit comfortably, drinking my favorite Starbucks coffee, watching Must Love Dogs, and listening to the pitter patter of raindrops on my windows.
I love the rain.

These Pumpkin Spice Cookies!! They are the perfect amount of chewy, pumpkin and spice, all crammed into a few bites!
Easy Chewy Pumpkin Cookies
(Gluten Free & Vegan)
- 2 t. Vanilla
- 1/2 C. Earth Balance Butter melted
- 1/3 C. Molasses
- 2/3 C. Pure Pureed Pumpkin
- 2 Flax Eggs (or regular eggs for the non-vegan)
- 1 T. Cinnamon
- 2 t. Nutmeg
- 1 t. Ground Cloves
- 3/4 C. Nutiva Coconut Sugar
- 2 t. Baking Soda
- 1 t. Salt
- 2 1/2 C. Flour (use 2 Cups Oat Flour and 1/2 C. Oats for Gluten Free option)
Pre-heat oven to 350. Combine vanilla, butter, molasses, pumpkin, and eggs, stir well. Add remaining ingredients stirring in flour last, stir until well combined. Chill dough for 30 min. to an hour. You can bake without chilling however dough will be very sticky. Once dough is chilled, scoop in one tablespoon spoonfuls onto baking sheet (I use a silpat mat on top of the baking sheet). Bake for about 12-13 minutes depending on your oven. Let cool.
