Easy Crunchy Granola Recipe (Vegan + Gluten Free!)


Are you tired of searching for the perfect crunchy granola recipe? Well, look no further! This recipe is not only easy, but vegan and gluten free! The secret ingredient is banana. It helps add that crunch factor, as well as added sweetness without the sugar! Feel free to add in any extra seeds or nuts you would like. I prefer mine with Pecans, Sunflower Seeds or Walnuts. You could even mix in coconut or dried cherries. The optional mix in ideas are endless! It is perfect as a grab and go snack, or in a yogurt parfait for breakfast. I personally pack mine to go in a tupperware with coconut yogurt. It is the perfect fuel to get me through my busy days at culinary school. Enjoy! Easy Crunchy Vegan Gluten Free Granola perfect for snacks and breakfast on the go!

  • 1 Banana mashed
  • ½ C. Maple Syrup
  • ¼ C. Coconut Oil
  • 2 T. Cinnamon
  • ¼ C. Sunflower Seeds
  • 1½ C. Pecan halves
  • 1 t. Salt
  • 4 T. Chia Seeds
  • 3 C. Gluten Free Oats
  1. Preheat oven to 350F.
  2. Combine banana, maple syrup, and coconut oil in large bowl. Add remaining ingredients stirring in oats last.
  3. Spread evenly on a baking sheet. The granola should be in one even layer, spread on second sheet if necessary.
  4. Bake at 350F for 20-25 minutes or until golden brown. Let cool and store in an airtight container for optimum freshness.
