Pear, Fig, and Vegan Goat Cheese Salad with Easy Lemon Vinaigrette
  • 4 Figs (sliced thinly lengthwise)
  • 2 Pears (sliced thinly lengthwise)
  • 6 Cups of Fresh Greens (Spinach and Arugula are great options)
  • ⅓ C. Vegan Goat Cheese (get the recipe here, Miyokos & Treeline are great pre-made brands.
  • Lemon Vinaigrette
  • 1 T Lemon Zest
  • 1 t. Dijon Mustard
  • ¼ C. Lemon Juice
  • 1 t. Sugar
  • ¼ C. Olive Oil
  • Optional Salt and Pepper to taste
  1. Spread the greens on four plates.
  2. Divide the Figs and Pears amongst the plates.
  3. Top with Goat Cheese.
  4. Mix together the ingredients for the Lemon Vinaigrette in a small bowl.
  5. Serve with salad. Enjoy!
