Pear, Fig, and Vegan Goat Cheese Salad

I simply cannot believe that Summer is almost over {GULP}.

The days are getting shorter, and schools will be back in session soon. I love the warm and balmy weather, but after almost two years in Kauai, I am ready for the cool Fall evenings, not to mention Halloween! I can almost see the Trick-or-Treaters, and smell the Pumpkin Pie! Halloween is one of my favorite holidays, I am very excited to see how Los Gatos and Campbell show off their festive spirit.

Ok, back to the salad. The local markets here have had an abundance of figs, what better way to “Pear” this than with Pears??? Get it pair? Ha Ha. All humor aside, figs, pears, and vegan goat cheese together on a bed of greens…. YES PLEASE. If you are too busy to whip up your own vegan cheese there are great options listed below. Please let me know if you try it!

Pear, Fig, and Vegan Goat Cheese Salad with Easy Lemon Vinaigrette
Recipe type: Salad
Serves: 4
  • 4 Figs (sliced thinly lengthwise)
  • 2 Pears (sliced thinly lengthwise)
  • 6 Cups of Fresh Greens (Spinach and Arugula are great options)
  • ⅓ C. Vegan Goat Cheese (get the recipe here, Miyokos & Treeline are great pre-made brands.

  • Lemon Vinaigrette
  • 1 T Lemon Zest
  • 1 t. Dijon Mustard
  • ¼ C. Lemon Juice
  • 1 t. Sugar
  • ¼ C. Olive Oil
  • Optional Salt and Pepper to taste
  1. Spread the greens on four plates.
  2. Divide the Figs and Pears amongst the plates.
  3. Top with Goat Cheese.
  4. Mix together the ingredients for the Lemon Vinaigrette in a small bowl.
  5. Serve with salad. Enjoy!
